Sorry, internet. you confuse me. you make me do things that cause things to disappear.

Here are some recipes that got lost in the Shufffle! No more!

Chicken Salad and Watercress Sandwiches

 

½ a chicken (smoked, cooked) or 3 large Chicken Breasts

½ c. green grapes, halved

½  Red onion, finely diced

¼ c. toasted walnuts, chopped

1 rib of celery, diced

½ Apple (gala or granny smith are my favorites) diced

1 bunch watercress

1 tomato, sliced thin

8  small slices sourdough bread, toasted

½ T. Dijon mustard

2 T. Greek yogurt

All seasoning salt, to taste

Pepper, to taste

 

Cut chicken into small chunks. If stripping a whole chicken, be sure to pick through to make sure all the cartilage and bony bits are out of the way.

 

Put in large glass bowl. Add the diced celery, onion, apple, grapes, and walnuts. Evenly combine. Add yogurt and Dijon and stir. Make sure everything is distributed as evenly as possible and that the mixture is moist enough. Give it a taste. If it needs more veggies, add them. Add more mustard or yogurt (you can use mayonnaise if you prefer) until you reach your own preferred consistency.  Season with salt and pepper and chill.

Toast sourdough and spoon chicken salad on one side. Lay a slice of tomato and 3-4 leaves of watercress on the other. Serve.
